Default Bluetooth stereo for GPS

Hi,

I'm looking to replace the OEM stereo that came with my 2000 built
Fiesta Zetec with on that supports Bluetooth so I can take calls and
have GPS directions played through the car speakers. What I'm worried
about is how the GPS instructions would work.... I use TomTom running on
my Nokia E61 phone (which I assume can talk to something pretending to
be a headset at the same time as talking to a Bluetooth GPS receiver).

My questions a

1) I presume that a stereo would/could give priority to audio coming in
over Bluetooth, is that so?
2) Would TomTom have to connect each time it wanted to play an
instruction (hence been delayed or have the start chopped off)? If it
remained connected all the time then would that stop the stereo from
playing sound from another source
3) Does anyone have any recommendations as to which stereo to buy?
(Sound quality isn't really a huge issue but cost is a definite factor!)
