recording a 3 way conversation in a room - PZM mic?

I suppose it's better to have three people off mic on one mic rather than
three.

There is no good way to reduce room bounce in post production. (There are
several boxes, but they are very difficult to find and they cost a lot.)

A lav on each person and the use of an auto-mixer will result in better sound.

You may find that some sound treatment will also help.

Rent a Shure FP410 and three lavs you can bury under clothing. The
Countryman B6 would be my choice for smallness. The New Sony 88b are larger
but have very low mechanically-induced cable noise.
