'Baluns' are IME a term used for RF transformers so no. You could use audio
balancing transformers but note that (a) audio transformers are very
expensive for decent quality (b) all transformers degrade the signal slightly
at least anyway.

Not may places stock audio transformers these days since there's little
demand. Sowter and Oxford Electronic Products come to mind as manufacturers.

I assume I would need a pair for left, and a pair for right too?


If you were going to use them - yes.

Suggest you simply use STP instead ! ( screened instead of unscreened )
