Default Audio down UTP

'Baluns' are IME a term used for RF transformers so no. You could use
audio balancing transformers but note that (a) audio transformers are
very expensive for decent quality (b) all transformers degrade the
signal slightly at least anyway.

Pro audio transformers tend to be made for the sort of levels and headroom
you need for that - say about +30 dB. No need for domestic line level.

If so, where do I get some! (CCTV ones are 75ohms)

Not may places stock audio transformers these days since there's little
demand. Sowter and Oxford Electronic Products come to mind as
manufacturers.

I've found the OEP range sold by the likes of Rapid fine for domestic line
level in a non critical application like feeding things round the house.
They're roughly a tenner each and come in various specs.
