Looking at the headers, Thunderbird seems to have changed from
"Content-Type: text/plain; charset=UTF-8; format=flowed"
to
"Content-Type: text/plain; charset=ISO-8859-1; format=flowed"
for my outgoing messages, without my changing anything.

I'll try to keep the latter format especially for you.
