For voice over ip. I'd like the mic to be able to comfortaby pic up say

Most pukka headset mics are designed to reject 'distant' sound by nature.
You've also got the problem of spill from the earpieces if you try and
pick up distant stuff.

I'm not quite clear why you'd want it to pick up something 2 metres away?
A two way conversation? If so, the mic needs to be roughly equidistant
between the two sources.
