Default Bridging?

Ok this is probably a very silly question from someone who doesn't
really understand audio electronics but is it possible to bridge 2

channels
on a 4 channel amp and keep the other 2 channels unbridged (and stereo)
for the components or is this going to need to be a 2 amp setup?

Yes, no problem at all, unless you buy a really weird (and probably very
old) amp. Every four channel amp I've ever come across has been capable of
doing what you propose. In fact, it's what four channel amps are normally
intended for !

Steve.
